Festive Fall Squash

tulsasquashI know it may seem a little late for the festive part but this was the best squash I have ever come across and want to share it with you for anytime of the year – and very simple.

Any type of squash may be used.  Puncture squash skin several times with a knife.  Put in microwave on high for 10 minutes.  Remove and cool.  When squash is cool, cut, remove seeds, peel and cut into squares of your desired serving size.  Put in 9 x 13 pan (which has been sprayed with Pam).  On stove top, in sauce pan, combine 1 stick butter, 1/2 cup honey, 1/2 cup brown sugar, and 1 T. vinegar.  Bring to boil.  Stir.  Sprinkle chopped walnuts and craisins over squash squares.  Pour liquid mixture over all.  Bake at 350 for 1 hour, or until done.

Best squash I have ever had!
